Low Carb Livin'


I've come to realize something about diets - they are worthless. A diet is something that we do for a little while and then when we see results, we stop because we think we've reached our goal. Then, before we know it, our pants are too tight again, we eat more sweets and junk than we realize and all that weight that we lost is back again - and out come the "fat pants" from the closet that you swore you'd never wear again! Unfortunately, I learned that from experience and I got tired of the up and down of the scale and I got tired of not being able to wear the clothes in my closet. So, Court and I decided to do the low carb thing again. And it's working out great. The only reason why we didn't stick with it the first time is that I got pregnant - it's nearly impossible to not eat carbs while you're pregnant! However, low carb eating really suits us well and I'm glad we've decided to get back on it.

But this time I realize that I can't stop when I reach my goal. Instead of saying that I'm on a diet, I'm choosing to say that my way of eating is more of a life change or a lifestyle. I haven't had refined sugar or refined/prcessed carbs since June and I don't miss them at all. I eat a lot of vegetables, lean meats, some fruits and I even get to eat cake - yes, cake! I made a low-carb chocolate cake from some low-carb pancake mix (so, yes, we eat pancakes, too!) and I also found a great low-carb pumpkin pie recipe - mmm! Pumpkin is a naturally low-carb vegetable, which is great for me because I couldn't go through the Fall season without it! We also enjoy fajitas with low-carb tortillas and found some organic, low-carb flax seed bread for sandwhiches, french toast and grilled cheese sandwhiches. As you can see, we have plenty of variety in our diet without all the processed junk. Having a variety of flavorful recipes is definitely key to keeping your palet from getting bored.

So what's my total weight loss over the past two and a half months? A healthy 19 pounds! And I feel great! Even if I don't lose another pound, I'll continue to eat this way because I'm healthy and much more happy because I feel great. And in the end, that means more than having a skinny waist line.
